I know what you’re thinking… Switzerland = Sausage. But after a week of eating sausage, we were looking for something a little different. Haus Hiltl actually has an amazing story. It’s the “world’s first vegetarian restaurant” in existence since 1898. It’s a BIG place (which is also somewhat rare in Europe). The food is extremely international with vegetarian dishes from everywhere you could imagine. It’s so unique that they give kitchen tours. They’re known for their buffet, but we went with the regular menu that night. Guess we’ll have to go back for the buffet experience one day. I had the pleasure of eating the most beautiful cauliflower soup. (I’ve spent a few nights since then attempting to recreate this cauliflower soup to no avail.) I also had a saffron gnocchi. Saffron. Gnocchi. So yum.
