Ok, so we tried Chapulines aka CRICKETS. Crickets and ants are being touted as a next big alternative protein. It’s supposed to be more sustainable and good for conservation purposes. Many other countries have gone the route of insects as an alternative protein for years, including Mexico. With as tasty as Cacao’s food is, we figured we were in good hands to try them here. Believe it our not, they were delicious. They were crunchy, nicely charred, and I’d totally eat them again.
The street tacos were awesome, packed with flavor.
The mole is perfection. Mole sauce is a traditional Mexican sauce that, in my opinion, is just about the best thing in the world. It’s usually a combo of things like peppers, chiles, chocolate, and cumin-y spices. The beauty of it is that it takes a LONG time to make, the flavors are ever-changing, and can be ladled over just about anything to make it taste amazing. It’s so good.
The staff at Cacao also talked us into ordering the Birria, that massive pork shank below. Cooked to perfection. We will come back to Cacao A LOT.
